1. Classic Phở Gà (Chicken Noodle Soup)

Phở Gà is a lighter version of the famous beef noodle soup. This chicken noodle soup is aromatic and filled with protein.

Ingredients:

  • 1 whole chicken
  • Celery stalks and carrots, chopped
  • 1 onion, halved
  • Ginger, sliced
  • Rice noodles

  • Fish sauce and lime for seasoning

Instructions:

Instructions:

  • 200g crab meat or paste
  • Rice noodles
  • 1 tomato, chopped
  • Water or seafood broth

  • 4 cups dashi (Japanese broth)
  • 3 tablespoons miso paste
  • 150g soft tofu, cubed
  • 1 cup wakame seaweed, rehydrated
  • Chopped green onions for garnish

Instructions:

  1. Heat the dashi broth in a pot but do not let it boil.
  2. Dissolve the miso paste into the heated broth.
